Having previously tried muffins baked on a griddle, these were baked in the oven. In the first photo. The two furthest away are 50:50 white and heritage wheat wholemeal sourdough, the front two are white yeasted dough.  Weighed at 90gr to fill my rings. Lovely open crumb for the sourdough version. Apart from a treat with Eggs Benedict  these are great toasted and eaten dripping with butter. Do you like the flavour of marzipan? Simnel cakes Do you like the flavour of marzipan? Simnel cakes are traditionally made at Easter. A light fruit cake with a layer of marzipan baked in the middle. Topped with more marzipan and balls, one for each disciple. These are my mini simnel cakes. Baked with a ball of marzipan in the middle then topped with another. If you could have seen me covered in chocolate wit If you could have seen me covered in chocolate with chocolate everywhere, but it was such fun! @paul_a_young ‘s Easter Egg masterclass for @learningwithexperts had me trying tempering vast amounts of chocolate and wrangling it into an Easter egg. It came out of the mould beautifully but I fell at the last hurdle as I had no gloves to stop fingermarks spoling the sheen. Lammas Fayre is milled from a unique blend of 150 heritage wheat varieties developed by Heritage Harvest. Stoneground by @shiptonmill it is very flavourful and gives a light crumb. One to try. I’ve been thinking a lot about past holidays and I’ve been thinking a lot about past holidays and of course the food discovered. Many moons ago we stayed at the wonderfully named Off Our Rockies B&B in Canmore, Canada. Imagine warm muffins for breakfast! I found the recipe the other day and here they are: Rhubarb Muffins. The rhubarb adds a lovely moistness and a subtle hit in each bite. Topped with cinnamon and pecans for added flavour. #muffins #breakfastmuffins #canmore #offourrockies #muddyspringbakes

The beauty of making your own buns is that you get to choose the spice mix. Mine was cinnamon, mace, allspice, ginger, nutmeg and a tiny pinch of black cardamom.
