A very no nonsense sourdough class with a lovely knowledgeable lady in a beautiful setting, a well... constructed course. I have been trying my hand at sourdough for a couple of years and attended some courses in the past and I have to say this was the best. I left with renewed enthusiasm to tackle sourdough baking that I have not been able to get quite right in the past. Thanks again Danielle it was very nice to meet you. We had a wonderful afternoon learning the art of sourdough making. We already had a little... experience with sourdough, but were not managing to produce consistent quality loaves. Danielle tailored the class to us perfectly and we learnt so much in a couple of hours. She has created a simple method which is grounded in science and experience, and we can’t wait to put it into practice. I would highly recommend.read more

Danielle Ellis has helped me tremendously. She has guided me with my Rofco oven and mixer to make... delicious sourdough bread. She is filled with a lot of knowledge and she has excellent advice. What a great experience! I booked 2 online bread classes (from Japan), and Danielle made the time... difference work, and taught me how to make 2 different kinds of wonderful bread. I'd been baking for a number of years prior to the lessons, but learned so many new techniques (she particularly has a very special kneading method that is wonderful). Highly recommended!read more

I enjoyed a one-on-one baking day with Danielle which focused on sourdough bread and the Rofco... oven. Although I had been baking for many years she really helped me with technique and had great suggestions for baking different loaves of bread.Her straightforward approach to baking bread and getting great results really stood out. I highly recommend her class.read more

I was bought a bread making class with Danielle as a gift and it was such a great experience! We... added my mum onto the course as she is also an avid baker and we had such a great afternoon. Danielle is so informative and has such a great way of teaching that we were so at ease and surprised ourselves with our efforts. My sister gave my daughter and I an online session with Danielle, as a Christmas present this year... - best Christmas present ever!If sourdough was one of your 2020 lockdown goals, and like us you've struggled to make anything that remotely resembles a loaf and given up, help is at hand!!The excitement as we lifted the lids on our new sourdough loaves was palpable. For the first time in my life I'd made a loaf that not only looked like bread, it tasted like it too!!Danielle's recipe is not only simple to follow, her technique is easily demonstrated over zoom. The bite-sized sessions fitted into the end of our busy working week, meaning we had fresh bread to start the weekend - what's not to love.Thank you Danielle for restoring our faith and confidence. We will definitely be signing up to a face-to-face session when all this madness is over.read more

Recently I gave two demonstrations at John Lewis in Cheltenham in their Discovery Room. Here’s feedback from one participant:

“I attended your John Lewis demo earlier in the month and thought I’d give you a bit of feedback.

I do make bread fairly regularly, on the back of recipe books- Paul Holywood etc. But I learned so much from your demo, e. specially A+B+C=60. So I have bought myself a thermometer from Lakeland and followed your recipe, also using your kneading method.(Dried yeast I’m afraid.) Excellent results- very pleasing”.

All of which goes to show a demo from an expert takes you a long way further than a recipe book!” George D.
