Some people think sourdough is all about having hu Some people think sourdough is all about having huge holes in the dough. These two loaves were made from the same dough and weigh the same. One was baked in a tin, the other free form. As @dad_in_the_kitchen said it is all about how you’re going to eat it. Do you want to loose your butter? Tin or free form? One of the people I’ve been wo Tin or free form? One of the people I’ve been working with commented that his tin loaves weren’t rising as much as his free-form loaves of bread. These two sourdough loaves weigh exactly the same -note the difference! Dough in a tin can only expand upwards and will have a more dense crumb. What fun #realbreadweek has been! My last post of What fun #realbreadweek has been! My last post of the week is in response to Becky Hadeed's comment on my pesto rolls recipe (search for pesto rolls on severnbites.com). She made the rolls in the way she'd usually make cinnamon buns. Her family were expecting sweet rather than savoury! 

The Pesto Rolls recipe can be made into buns, a loaf, or different share and tears. You can add extra savoury fillings to your taste - chilli, cheese etc. Here are some options to inspire you. I'm also including one of Becky's photos too - they are just so beautiful!

I was recently interviewed as a guest on @thestoriedrecipe.podcast and our episode is live!! Here’s what the host, Becky Hadeed, had to say about the episode and the highlights of our interview. 

"I’m very honored to introduce you to Danielle Ellis. Danielle is an Ambassador for the Real Bread Campaign and Judge for the World Bread Awards. 
Today, Danielle shares how a series of influences – a childhood love of French holidays, a summer stint as an au pair, a “mad Scotsman”, and a tough pastry teacher all came together to convince Danielle to leave a decades-long career in marketing and enrol in a French school for baking. Danielle completed the 670 hour course (!!). In addition, Danielle completed many months of work experience, including an internship at a bakery that used NO electrically-powered equipment – nope, not even to mix 50lb batches of dough. 

Today, as an expert on baking, scaling, marketing, and running a bakery, Danielle teaches classes to both novice and professional bakers. Welcome Danielle!"

If you’ve ever forgotten to add it to your dough, it will be very sticky and very hard to manage. In my blog post (link in bio) you’ll find out more. Rye and oat sourdough. Oats cooked into a porridge Rye and oat sourdough. Oats cooked into a porridge then added when cool.
